LA County Grading Ordinance Compliance Assessment
It is seen that the restaurant kitchen is not maintaining the LA County restaurant grading ordinance. The response is being formulated in order to present it to the Exit Reality. Exit Reality has requested a compliance report from the restaurant. Ms. Thomas will first evaluate the report. Then it will be forwarded to the agent of Exit Reality. As Ms. Thomas is not so much aware of the restaurant grading ordinance of LA County, this report will help her to understand the drawbacks of the kitchen of the restaurant (Berdanier, Dwyer & Heber, 2013).
It can be pointed out that the restaurant is famous for maintaining its ‘A’ grade as per the LA County grading ordinance. However, in it’s another branch of Aqua, the ordinance is not maintained. The quality of the food must be maintained in high standards as in the restaurant wealthy patrons and celebrities frequently visit the restaurant. However, it is also recognized as the flagship restaurant of the Premier Dining Group’s chain of high-end eateries. The inspection of the Canoe branch of the restaurant portrays that the restaurant is not maintaining the general hygiene metrics of the different attributes of the hotel standards (Buckley, 2015).
The appropriate document of the report will suggest Ms. Thomas that the thermometer of the restaurant kitchen is not working properly. Apart from that, the chefs are not wearing hairnets, and the chopper that is used for chopping the beef is used for chopping chicken without washing or sanitizing it. There are many other issues in the kitchen such as increased temperature and humidity. The report is formulated in order to make the changes in the kitchen and the habits of chefs that are associated with the different activities of Aqua kitchen (Wong et al., 2015).
Initially Ms. Thomas does not have any idea about the LA county ordnance and the activities that are actually going on in the kitchen of the restaurant. The report is focused on providing a clear understanding of the guidelines of the LA County to Ms. Thomas. The activities of the kitchen must be changed and meet the requirements of the ordinance, as the other branches are maintain ‘A’ grade successfully. If the external authority found the restaurant not maintaining the guidelines then the brand reputation of Aqua restaurant will be at stake. In terms of restaurants, the quality of foods and reputation matters a lot. Once, the customers are aware of the low grade hygiene of the foods supplied by the restaurant, then a negative Word of Mouth promotion of it will be spread that will diminish the rapport of Aqua (Berdanier, Dwyer & Heber, 2013).
