Introduction:

Also, the objectives, scope and limitation, significance of the study, definition of terms and conceptual framework are included and also the Background of the study. As we all know Eggplant (Solanum melongena) is a species of nightshade commonly known in British English as aubergine and also known as melongene, garden egg, or guinea squash. Eggplant is widely used in cooking, most notably as an important ingredient in dishes such as eggplant mix with egg.
Eggplants made their first appearance in Europe in the 14th century, and Thomas Jefferson first introduced them to 18th century America. Florida, California, and Georgia are leaders in U.S. eggplant production.
While eggplants don’t have an overwhelming supply of any one nutrient but they do across the board of many vitamins and minerals such as fiber, folate, potassium and manganese, as well as vitamins, phosphorus and pantothenic acid. . Once you realize how beneficial eggplant is to your health, you may want to give more consideration to it becoming a regular part of your diet.
Speaking of Acid, an Acid-base Indicator is a weak acid or a weak base. An indicator does not change color from pure acid to pure alkaline at specific hydrogen ion concentration, but rather, color change occurs over a range of hydrogen ion concentrations. This range is termed the color change interval. This can expressed as a pH range.

Hypotheses
I therefore hypothesize that eggplant peelings extract, after meticulous testing and improvising, could be an effective pH indicator.
Significance of the study
This research project is important in order for us to know the acid-base of the eggplant so that we limit eating eggplant and to know the effects of it in the human body.
Scope and Limitation
This project is limited only on the effect of eggplant to our body. This can determined the amount of acid/bases in the human body. It does not involve the quality of the eggplant.
Definition of terms
- Acid-base Indicator- organic compounds that, in aqueous solution, exhibit color changes indicative of the acidity or basicity of the solution.
- pH- a figure expressing the acidity or alkalinity of a solution on a logarithmic scale on which 7 is neutral, lower values are more acid, and higher values more alkaline. The pH is equal to -log10 c, where c is the hydrogen ion concentration in moles per litre.
- Eggplant- a. An Indian plant (Solanum melongena var. esculenta) cultivated for its large edible, ovoid, glossy, usually purple-skinned fruit. b. The fruit of this plant. Also called aubergine, melongene. C. blackish purple plant
